Steps to make 京酱肉丝

  • 1.准备一块里脊肉洗干净。
  • 2.准备葱姜蒜。
  • 3.将里脊肉切成片再切成条放进一大碗里。
  • 4.里面加盐、胡椒粉、生抽用手抓拌均匀,再加一个蛋清继续抓拌均匀,最后加适量玉米淀粉抓均匀。
  • 5.里面加少许食用油锁住水分。
  • 6.葱姜蒜切成末。
  • 7.锅中倒油,油温五成热将里脊肉丝倒进去炒至变白捞出。
  • 8.另锅中倒油,爆香葱姜蒜末。
  • 9.里面加一碗3勺甜面酱小火翻炒均匀。
  • 10.加少许生抽翻炒。
  • 11.加半碗温水烧开,里面加少许鸡精、白糖,老抽搅拌均匀。
  • 12.将肉丝倒进去倒进去翻炒均匀,再勾个薄欠大火翻炒均匀即可。
  • 13.装盘。
  • 14.再配点大葱丝。
