Steps to make 嫩滑鲜香酱油炒蛋

  • 1.鸡蛋打入碗中,加入半勺生姜粉,1勺食用油,半勺盐,用筷子打成液。
  • 2.葱切葱花。
  • 3.调个料汁,生抽2勺、蚝油1勺、陈醋1勺、白糖半勺、辣椒酱1勺,料酒半勺,干淀粉1勺,搅均匀,加入大约同等量的水。
  • 4.热锅凉油,油比平时要多一些,油热倒入鸡蛋,炒成大块盛出。
  • 5.用锅里剩余的油炒葱花,加1勺花椒粉提味。
  • 6.炒出香味后,将料汁倒入,改中小火,炒出醋香。
  • 7.倒入鸡蛋,大火翻炒均匀。
  • 8.放入小米辣,炒匀出锅。小米辣是点缀,可不放。
  • 9.鲜香嫩滑,美味下饭。
