肉夹馍
肉夹馍是古汉语“肉夹于馍”的简称,中国西北特色小吃之一,以陕西地区的“腊汁肉夹馍”(猪肉)和宁夏地区的“羊肉肉夹馍”为主。腊汁肉夹馍是陕西省著名西府小吃和西安著名小吃。宁夏的肉夹馍为羊肉馅。每个摊前摆有炉子,和西北其他地方的馍没有区别。

  • 五花肉500克
  • 230克
  • 八角3克
  • 桂皮3克
  • 生姜5片
  • 冰糖10克
  • 安琪酵母2克
  • 2克
  • 生抽30克
  • 老抽20克

Steps to make 肉夹馍

  • 1.五花肉最好选三层肉,有肥有瘦的。用热水清洗干净
  • 2.五花肉入锅,倒入没过肉的清水,水开焯去浮沫后再煮3分钟左右,把肉捞出,水倒掉不要
  • 3.捞出后五花肉切块,这样比较入味
  • 4.锅内再次倒入清水、焯好的五花肉,大火烧开,放入调料八角,桂皮,冰糖,盐,生抽,老抽,生姜,一根葱打个结一起放入
  • 5.盖上盖子小火慢炖,共炖2个多小时
  • 6.中间几次打开盖子捞去浮沫
  • 7.炖好的肉超级喷香
  • 8.肉剁碎后拌入葱,香菜,淋上肉汁一会夹在馍里
  • 9.酵母溶于温热(3-40℃)的清水并静置5分钟左右,然后倒入面粉中,加入盐,用筷子把面搅打成雪花状 (这个步骤在炖肉时开始操作)
  • 10.和成光滑的面团,盖保鲜膜静置发酵1小时,大约1倍大
  • 11.将面团搓条切成小面团
  • 12.擀成长条,然后卷起
  • 13.接口往里面压住
  • 14.卷好后立起来,用擀面杖擀成小圆饼
  • 15.拍好的饼放入干净的无油无水的平底锅中,小火煎熟至两面金黄色,关火,焖5-10分钟
  • 16.烙好的饼,中间横着切开不要切断,把肉碎夹入饼中,我一次能吃3个。。。。
