Steps to make 三杯鸡

  • 1.煮一锅水,加入少许料酒,放入鸡块汆烫断生。我一般用半只鸡切块,也可以鸡腿鸡翅切块,步骤图我用的是鸡翅。
  • 2.捞出后沥干。
  • 3.加入少许麻油,放入姜片炒至金黄。
  • 4.放入蒜瓣炒出香味。
  • 5.放入鸡翅翻炒,炒至表皮略有金黄。
  • 6.加入糖,翻炒均匀上色。
  • 7.加入米酒,酱油,和一半的麻油,翻炒均匀,小火加盖焖20分钟左右。
  • 8.开盖大火收汁,提前5分钟左右加入九层塔和麻油,翻炒均匀,待汤汁浓稠即可。
