西式早餐——奶油面包卷

  • 白砂糖40g
  • 牛奶130g
  • 鸡蛋40g
  • 黄油40g
  • 酵母4g
  • 蛋液适量(刷表面)

Steps to make 西式早餐——奶油面包卷

  • 1.将所有原材料(除黄油以为)混合在一起,粉类过筛,放入面包机揉至表面光滑,能拉出比较厚的膜,之后再加入黄油,揉至出手套膜
  • 2.将揉好的面团室温发酵至两倍大
  • 3.将面团排气,分成9等份,滚圆后再盖上保鲜膜松弛15分钟
  • 4.松弛后的面团擀成细长条,然后两边往中间对折在对折滚成条状,再次盖上保鲜膜松弛15分钟
  • 5.将面团搓成一头粗一头细的形状,压扁,擀成薄片,从宽的一边向细的卷成卷,烤箱中层,底部放温水,启动发酵工能,温度设定35度,二次发酵40分钟
  • 6.刷上蛋液
  • 7.烤箱提前预热,面包胚刷上蛋液放烤箱中层,上下火180度,烤18分钟即可
