流心芝士塔

  • 黄油112克
  • 全蛋液13克
  • 低筋面粉187克
  • 糖粉45克
  • 奶油奶酪250克
  • 牛奶30克
  • 糖粉65克
  • 淡奶油100克
  • 朗姆酒5克
  • 玉米淀粉5克
  • 柠檬汁2克

Steps to make 流心芝士塔

  • 1.首先制作挞皮,黄油室温软化,加入糖粉发至颜色变浅,体积膨胀
  • 2.分次加入鸡蛋液继续打至轻盈羽毛状
  • 3.加入过筛的低筋面粉
  • 4.拌匀成面团,放入冰箱冷藏半小时
  • 5.冷藏好的面团取出分成25克每个的小面团,放入蛋挞模具内,均匀的用手按压挞皮
  • 6.用叉子在底部扎孔,防止烤的时候鼓起
  • 7.将挞皮放入预热好的烤箱中层,上下火180度,烤15分钟使其微微烤熟上色
  • 8.接着制作内陷,软化的奶酪奶酪用电动打蛋器打发至顺滑,,
  • 9.,分别加入牛奶、淡奶油,搅打均匀
  • 10.再依次加入糖粉、玉米淀粉、柠檬汁跟朗姆酒,用刮刀拌匀
  • 11.这样芝士奶酪馅就做好了
  • 12.将奶酪馅挤入挞皮内8分满,刚好差不多持平挞皮即可
  • 13.刮平表面后放入冰箱冷冻2小时以上,冻硬,取出表面刷一层蛋黄液
  • 14.放入烤箱中层,上下火200度,烤17分钟即可
