这个肉夹馍,本来做了一次,没做好,听了丝丝的方法改进了面饼,西马栀子的方法做内馅后,果然进步了许多。
面饼虽然软但是也有点质感硬度。内馅夹的不是单纯的红烧肉,而是有辣椒和香菜,似乎更好吃,口感也丰富多了!

    Steps to make 肉夹馍

    • 1.融化酵母,混合面粉揉团,发酵一倍大就拿出来,揉回原样,多揉三分钟。
    • 2.红烧肉做好,不要收汁。
    • 3.面团分成大小合适的团。
    • 4.每个揉20次,摁扁擀成小饼,有点厚度。
    • 5.冷锅放进平底锅,开小火烙。不放油。
    • 6.一边稍微定型,翻另一边。继续小火烙,要耐心,等到都发胀起来,鼓的有点裂那种,就好了。
    • 7.肉和青椒香菜剁碎备用。
    • 8.取一个饼,用干净的刀剖开。
    • 9.肉青椒香菜碎,塞进去,浇点红烧肉汤汁即可。
