红豆酥
第一次做红豆酥,虽然卖相比较一般,但是酥脆度真的杠杠的-----果然,用猪油做的油酥面团,皮很酥。

  • 面粉200克
  • 猪油80克

  • 红豆馅375克
  • 鸡蛋一个

Steps to make 红豆酥

  • 1.做好油酥面团(300克面粉+1克酵母+2克盐+猪油100克)搅拌均匀,揉成面团;水油面团(200克面粉+140克水+15克糖+80克猪油)搅拌均匀,揉成面团(备注:这次准备的材料够做25个红豆酥)
  • 2.做好的油酥和水油面团(水油面团静置冰箱1小时,油酥面团室温放置即可)
  • 3.没有自己做红豆沙,直接在超市买的红豆馅
  • 4.15克一个,分成若干份
  • 5.水油面团25克一份,分好后醒15分钟(记得用保鲜膜盖起来,不然面团容易干)
  • 6.油酥面团12克一份,分好后醒15分钟(记得用保鲜膜盖起来,不然面团容易干)
  • 7.水油面团压扁,然后把油酥包起来,像包包子或者汤圆一样
  • 8.接着用擀面杖把面团擀成长条形
  • 9.卷起来
  • 10.醒15分钟
  • 11.两边捏在一起,揉成圆形
  • 12.面团稍微擀成圆形面皮,把红豆馅放进去,包起来
  • 13.包好的红豆酥继续醒15分钟
  • 14.进烤箱前,刷蛋液,撒上熟芝麻
  • 15.送入烤箱,180度烤25--30分钟
  • 16.烤好的红豆酥
  • 17.一口咬下去,非常酥
