酱香饼有很多做法和口味~

  • 玫瑰腐乳1/2块
  • 十三香1勺

Steps to make 酱香饼

  • 1.250克雪花粉,加2克盐,一半用70ml的开水、另一半用70ml的冷水和成偏软一点的面团,先松弛10分钟后揉至表面光滑,然后饧面30分钟(这里的用量做了两张饼)。
  • 2.配菜:1个洋葱切块、3-5瓣大蒜、2-3片姜片、1根葱白切段。
  • 3.放入料理机中,加1勺郫县豆瓣酱、2勺甜面酱、1/2勺黄豆酱、1/2块玫瑰腐乳、1勺十三香、1/2小碗清水(根据个人口味调整用料和用量)。
  • 4.用料理机将食材一起搅碎。
  • 5.起锅热油,倒入酱汁,开中小火炒出香味,加1勺白糖、2-3勺白芝麻搅拌均匀。
  • 6.盛出放凉备用(吃不完可以密封冷藏保存)。
  • 7.将饧好的面分成等分小剂子,先擀成大薄片,刷层薄油(或油酥)后,卷成饼坯,再次擀成比锅大一些的大薄片。
  • 8.电饼铛开大火(平底锅开中小火),倒入稍多一点的油,将用擀面杖卷着的大薄饼慢慢放进去,同时弄出些褶皱(方便后面挂酱汁)。
  • 9.盖上盖子(保持水分,防止饼太干),烙1分钟后翻面,烙至两面金黄。
  • 10.刷上一层酱汁,撒上芝麻和香葱。
  • 11.趁热切成小块装盘。
