枣糕
枣糕原是清朝宫廷御用糕点,其味香远,入口丝甜,含有维生素C、蛋白质、钙、铁、维生素等营养成分, 既能补脾和胃、益气生津;还有保护肝脏、增加肌力、养颜防衰之功效。

  • 红糖50g
  • 鸡蛋5个
  • 玉米油50g
  • 泡打粉1g
  • 牛奶35g
  • 1g

Steps to make 枣糕

  • 1.准备材料。
  • 2.红枣洗净用水煮半小时左右。
  • 3.捞出沥干水,去皮去核。将红枣制成细枣泥。
  • 4.将鸡蛋蛋白、蛋黄分离。
  • 5.蛋黄中加10g红糖、枣泥、玉米油和牛奶用筷子搅拌均匀。
  • 6.将过筛后的低筋面粉、泡打粉、盐加入步骤6中,用刮刀拌匀。
  • 7.蛋白中加几滴白醋,低速打成粗泡。
  • 8.加入40g红糖继续打发,打发至提起打蛋器,蛋白能拉出弯曲的尖角就可以。
  • 9.将1/3蛋白取出倒入蛋黄糊中。用橡皮刮刀轻轻翻拌均匀。
  • 10.将拌好的蛋黄糊全部倒进余下的蛋白盆中。
  • 11.用同样的手法翻拌均匀。
  • 12.将蛋糕糊倒入模具中,轻轻晃动模具去除气泡。
  • 13.烤箱165度预热,中层烤30分钟。
  • 14.烤好后冷却脱模,然后用刀切块即可。
