  • 无盐黄油20 g
  • 温水13 g
  • 红糖粉14 g
  • 白糖粉16 g
  • 蜂蜜12 g
  • 鸡蛋10 g
  • 低筋面粉100 g(蛋糕粉)
  • 生姜粉0.4 g
  • 肉桂粉0.4 g
  • 苏打粉0.6 g
  • 蛋白粉5 g
  • 糖粉75 g
  • 温水15 ml(~20ml)

Steps to make 姜饼人

  • 1.无盐黄油、温水、红糖、白糖、蜂蜜放入盆中,小火隔水加热至材料融化混合均匀。注意不要煮沸。
  • 2.降温后,加入蛋液混合均匀。
  • 3.蛋糕粉、生姜粉、肉桂粉与苏打粉先混合,过筛加入2、中搅拌成小碎粒,再用手逐步揉成面团。
  • 4.做好的饼干面团放入塑料袋中,冷藏一小时。
  • 5.取出冷藏的面团略会问。烤箱预热至170°C(我的烤箱有点儿问题,所以是上火180°C、下火150°C)。面团擀成5mm厚的面皮,用模具压出想要的形状,排入铺了烘焙纸或耐烤布的烤盘上。
  • 6.入烤箱烤12~15分钟,饼干上色即可取出。
  • 7.取出的饼干放在散热加上,一定要完全放凉(一般建议隔夜)。
  • 8.蛋白粉、糖粉及温水混合后,用打蛋器低速打至蛋白霜可拉出尖角。
  • 9.打好的蛋白霜放入挤花袋中、剪个小口,即可在饼干上画图案。也可分别加入可可粉、抹茶粉、冻干草莓粉,调出想要的颜色。
  • 10.上好糖霜的饼干一定要完全干燥、才能装袋哦!
  • 11.也可做姜饼屋。
