酸萝卜炖老鸭
鸭肉清热去火,搭配酸菜炖出来的汤清爽不油腻。一定一定要用老鸭才好,它的汤油脂层很少很少,肉质也几乎是纯瘦,几乎没有肉鸭的那种肥膘,肉鸭子是炖不出这味儿的。

Steps to make 酸萝卜炖老鸭

  • 1.老鸭剁小块,清洗干净。
  • 2.冷水下锅,准备焯水备用。
  • 3.开锅后打掉浮沫,改中火焯两分钟即可捞出沥干水分。
  • 4.控干水分。
  • 5.热锅,放入一块猪油,放入新鲜姜片爆香。
  • 6.倒入焯水后的鸭肉,煸炒两分钟,关火。
  • 7.从坛子里捞出泡菜泡姜和老萝卜。
  • 8.改刀切小块。
  • 9.切好的酸菜连同刚才炒好的鸭肉一起放入高压锅里。
  • 10.加入没过鸭肉的水,盖上盖子启动汤类功能,大约一个小时二十分钟左右即可。
  • 11.成品图。
