Steps to make 鱼香鸡丝

  • 1.食材。
  • 2.鸡肉切丝,加入少许白胡椒粉、少许食盐、1茶匙淀粉、1茶匙料酒抓匀腌渍几分钟。
  • 3.腌渍鸡肉的时候来处理辅料,豆瓣酱细细的切成末、红萝卜、泡发好的木耳,玉兰片分别切成丝。
  • 4.准备一碗料汁,防止一会炒至的时候手忙脚乱。1茶匙料酒、2茶匙生抽、2茶匙白糖、3茶匙香醋、1茶匙玉米淀粉再加入少许清水搅拌均匀。
  • 5.腌渍好的鸡丝中加入1茶匙食用油,再次拌匀。
  • 6.锅中放油,油温五六成热下入鸡丝炒至变色即盛出。
  • 7.另起锅,放入蒜末、剁椒、豆瓣酱、葱末小火炒出红油。
  • 8.炒出红油后,放入笋丝、木耳丝、胡萝卜丝翻炒。
  • 9.炒至三丝变软,放入滑炒好的肉丝。
  • 10.快速翻炒均匀,倒入备好的料汁。
  • 11.快速炒至料汁浓稠,基本裹在食材上即可光火。
  • 12.成品。
