宫保鸡丁,以色泽棕红,鸡肉香嫩,略带甜酸味闻名,广受大众欢迎。虽然食材简单,但要做到色香味俱全还真是不容易,最近在家试着做了几次,终于感觉有那么点意思了,跟大家分享下。

  • 嫩肉淀粉1勺
  • 玉米淀粉1勺

Steps to make 宫保鸡丁

  • 1.花生米用开水浸泡下,剥去外皮,沥干水分。
  • 2.热锅凉油小火,下入花生米,不断翻炒。
  • 3.等翻炒声音变脆,花生中间裂开,微微有点上色,立刻捞出放凉。
  • 4.鸡肉洗净,去掉黄色的鸡油,再切成1.5厘米的方丁,用少量盐和黑胡椒粒,1勺嫩肉淀粉,1勺料酒拌匀。
  • 5.大葱切开后再切成小段,干辣椒去掉辣椒籽切成小段,姜蒜切成片。
  • 6.碗中调入3勺料酒,2勺米醋,2勺白糖,1勺老抽,再加入1勺玉米淀粉、1勺水,搅匀,搅拌成汁。
  • 7.热锅,凉油,放入花椒粒,小火炸出香味后捞去花椒,下入干红辣椒段迅速炒成棕红色,放入鸡丁炒散。
  • 8.等鸡丁颜色变白后烹入1勺料酒翻炒。
  • 9.加入葱姜蒜继续煸炒出香味,再倒入调好的汁翻炒。
  • 10.等汤汁煮沸,加入花生米。
  • 11.快速翻炒炒匀即可。
  • 12.色泽棕红,鸡肉香嫩,略带甜酸味,很俗很喜欢。
