[青椒肉丝]--- 女儿最爱的下饭菜
青椒肉丝,一道充满妈妈味道的美食,自记事以来,小时候,每一年的年夜饭桌上都有它的身影,那是我最喜欢的、是妈妈最拿手的。如今,这是女儿最爱吃的,也是我最拿手的。年夜饭时,依然不会少了它的存在。我喜欢把它放到最后,既开胃又下饭。女儿时常会幸福的说:“妈妈的味道,是世上最美的味道”。

  • 青椒5个
  • 红椒1个
  • 生姜一块
  • 蒜瓣2个
  • 1茶勺
  • 料酒1汤勺
  • 姜汁少许
  • 生抽1汤勺
  • 白糖1/2茶勺
  • 香醋几滴
  • 玉米淀粉1/3汤勺

Steps to make [青椒肉丝]--- 女儿最爱的下饭菜

  • 1.瘦肉洗净,切成细丝。青椒洗净,斜刀切成片。
  • 2.生姜切丝、蒜瓣切末,红椒斜刀切成片。
  • 3.把肉丝放入碗中,调入1茶勺的盐、1汤勺的料酒、和少许姜汁,抓匀腌制片刻,去腥入底味。
  • 4.加入1/2汤勺的玉米淀粉)。
  • 5.轻轻搅拌均匀。
  • 6.空锅置火上烧热后再倒入适量食用油。
  • 7.热锅凉油,倒入肉丝。
  • 8.用筷子均匀的拨散,肉丝会逐一分开,而且不粘锅,炒约半分钟至肉丝变色。
  • 9.把肉丝移动到锅的一边,把油留在锅底。
  • 10.下入姜丝和蒜瓣煸香,接着下入青红椒。
  • 11.翻炒至青红椒断生。
  • 12.再用锅铲把肉丝盖过来混合。
  • 13.调入1汤勺的生抽、1/2茶勺和几滴香醋,翻炒均匀即可出锅。
