Steps to make 入口即化酸奶溶豆条❤️无糖宝宝小零食

  • 1.65克老酸奶和28克婴儿奶粉放一起,玉米淀粉10克。
  • 2.酸奶和奶粉用蛋抽充分混合,滤网压着过滤一下,放冰箱冷藏备用。
  • 3.裱花袋剪口,放sn7092中号裱花嘴。
  • 4.裱花袋套入高一点的容器备用。
  • 5.蛋清80克(约两个蛋清量)倒入无水无油的深盆中,放冰箱冷冻室,冻到蛋清轻微结冰,这样打发的蛋白比较稳定。
  • 6.先滴入柠檬汁,打蛋器中低速打发,打到呈现长而直的尖,停下来。
  • 7.加入玉米淀粉10克。
  • 8.继续低速打发,边打边停下来观察,提起打蛋器,打蛋头出现几个短而多的小直尖,就是打发好了。
  • 9.打发好的蛋白,光滑如奶油,呈固体状,硅胶铲挖一勺,随意翻转不会掉。
  • 10.如图,蛋白很细腻,不流动,倒扣盆子不会掉。
  • 11.取三分之一蛋白加入酸奶奶粉糊中,采用翻拌的手法搅拌均匀。
  • 12.倒入剩余的蛋白,像炒菜一样翻拌均匀,切记不能画圈搅拌,防止消泡。
  • 13.刮入裱花袋。
  • 14.烤箱提前预热100℃,放中层烤90分钟,烤盘铺油布,均匀的挤出手指左右长度的溶条。
  • 15.这是烤好的溶豆,判断溶豆是否熟透:1.可以轻松的从油布上拿掉,底部不粘2.里面是酥脆的,一捏就碎,不是软的。
  • 16.烤好的溶条散热后马上密封保存,防止回潮。
  • 17.溶豆适合1岁以上宝宝,酸奶溶豆,奶香味浓郁,加了酸奶,酸酸甜甜的,入口即化,营养价值高。
