白菜猪肉水饺
今天是小年,饺子是必不可少的,
小年的饺子都是现吃现包,
我家一般都会用白菜做馅,
在青岛最多的就是胶州大白菜,
胶州大白菜帮嫩薄、汁乳白、味鲜美、纤维细,
白菜芯是黄色的,
用来包饺子,真是鲜香味美;
白菜猪肉水饺基本是小年夜的主打饺子。

  • 猪肉馅400克
  • 白菜芯1000克
  • 花生油二大勺
  • 3 勺
  • 姜粉一小勺
  • 酱油二汤匙

Steps to make 白菜猪肉水饺

  • 1.准备猪肉馅和葱末;猪肉馅选用肥瘦相间的,三分肥七分瘦;
  • 2.胶州大白菜选用白菜芯,只用白菜帮部分;
  • 3.白菜洗净后,用擦床擦成碎末;
  • 4.放入2勺盐,杀出白菜的水分;
  • 5.猪肉馅里放入葱末、一小勺姜粉;
  • 6.放入二汤匙酱油;
  • 7.放入一勺盐;
  • 8.用工具搅拌均匀;
  • 9.最后放入一大勺花生油,搅拌均匀待用;
  • 10.白菜已杀出水分,用手轻轻攥出水分;
  • 11.攥掉水分的白菜里,放入一大勺花生油,搅拌均匀;
  • 12.把猪肉馅与白菜馅混合一起,搅拌均匀;
  • 13.包饺子,可根据自己喜欢,包成各种形状;同时坐锅烧水;
  • 14.水开后下入饺子,用汤勺顺着锅边轻推饺子,以免沾底,连续煮开三次,我们叫煮三开,最后点入少许的凉水,再次煮开后,捞出饺子;
  • 15.上桌吃饺子,我就喜欢沾点醋吃。
