洋葱炒鱿鱼
鱿鱼,也称枪乌贼、柔鱼,营养价值很高,其富含蛋白质、钙、牛磺酸、磷、维生素B1等多种人体所需的营养成分,且含量极高,而且脂肪含量极低。中医认为,鱿鱼有滋阴养胃、补虚润肤的功能。

现代医学通过研究发现,鱿鱼中虽然胆固醇含量较高,但鱿鱼中同时含有一种物质——牛磺酸,而牛磺酸有抑制胆固醇在血液中蓄积的作用。只要摄入的食物中牛黄酸与胆固醇的比值在2以上,血液中的胆固醇就不会升高。而鱿鱼中牛磺酸含量较高,其比值为2.2。因此,食用鱿鱼时,胆固醇只是正常地被人体所利用,而不会在血液中积蓄。而且鱿鱼中胆固醇最高的部位是内脏,而它正好是我们不吃的部分,所以,不要再因为担心鱿鱼的胆固醇而放弃它的营养和美味了。

Steps to make 洋葱炒鱿鱼

  • 1.鱿鱼去头,清除内脏洗净,鱿鱼筒剪开,扒去鱼皮,只用鱿鱼板。
  • 2.鱼皮面朝下,沿着脊椎的方向,纵向切成三条。将其中一条横放,用刀按照左上右下,倾斜145°的方向,切花刀。注意底部要切透不切断,每条的间距尽量一致
  • 3.将切好的鱿鱼向左旋转90°,仍然按照左上右下的角度,切花刀
  • 4.切好后,分成几块
  • 5.热锅热油,爆香葱花,胡萝卜,将洋葱稍炒软
  • 6.入七八十度的热水中,快速焯一下,看到鱿鱼微微卷起立刻捞出,沥净水分。切洋葱,葱花和胡萝卜丝
  • 7.倒入鱿鱼,加入盐、料酒、生抽和孜然粉,快速翻炒出锅即可
