酥皮月饼
中秋少了月饼就好像没有节日的气氛了。市面上的月饼花样品种繁多,但是能让人放心的月饼寥寥无几,咱们老百姓也无法辨别,那只好咱自己动手,丰衣足食喽。拿自己DIY的月饼送给亲人更有意义,过程更是乐趣无穷。即品尝了月饼又享受了快乐,何乐而不为呢。

今年做了冰皮月饼和酥皮月饼。

酥皮的制作应该用猪油和面,熬猪油较麻烦,剩下的油渣儿也没人吃,我就改用黄油,起酥效果也很好。配方来自君之,稍稍做了改动。

  • 普通面粉150克
  • 黄油60克
  • 白砂糖20克
  • 42克
  • 普通面粉100克
  • 植物油50克

Steps to make 酥皮月饼

  • 1.将黄油隔水融化。
  • 2.将水油皮的所有配料混合揉成光滑的面团。(主料:面粉、黄油、白砂糖、水)
  • 3.将油酥的原料混合揉成面团。(配料:面粉、植物油)
  • 4.将两种面团各分成均匀的9份,放置15分钟松弛。
  • 5.取一份水油皮放在手心,将其压扁成面皮。
  • 6.取一份油酥面团放在水油皮上并包起来,收口朝下放在面板上用手轻轻压扁。
  • 7.用擀面杖将面皮擀成椭圆形。
  • 8.擀好的面皮由外向内卷起来,口向下。
  • 9.再次将卷好的面皮擀成椭圆形。
  • 10.再次将擀好的面皮由外向内卷起。9和10的动作再重复1次。
  • 11.最后卷起的面团松弛10分钟左右。
  • 12.用擀面杖将面团擀成圆片,不要擀得太薄。
  • 13.在面皮上放入适量的馅料收口。
  • 14.收口处朝下,放在面板上整好形状。
  • 15.将包好的月饼放入铺好烘焙纸的烤盘,用手轻轻压扁。
  • 16.刷上蛋液,装饰表面来区分不同的馅料。
  • 17.烤箱200°预热5分钟,烤盘放入烤箱中层,烤30分钟至表皮成金黄色。
  • 18.金黄酥香的月饼出炉啦。
  • 19.放入包装盒里,别说还挺像那么回事儿。
