五仁月饼

Steps to make 五仁月饼

  • 1.自己做的转化糖浆,加入枧水,玉米油。
  • 2.用蛋抽搅拌均匀。
  • 3.加入面粉。
  • 4.揉成面团后盖上保鲜膜静置。
  • 5.自制的五仁陷称好重量后搓成圆球,每个是35g,100g的月饼用的是70g。
  • 6.饼皮每个称重15克,100克的月饼饼皮称重30克,搓成球后取一个手心按扁。
  • 7.饼皮放入五仁馅料。
  • 8.用虎口位置将饼皮慢慢往上推后包紧。
  • 9.月饼球裹少许面粉防沾,放入模具中。
  • 10.印出花纹后模具往下推出。
  • 11.印好的月饼摆放在铺了油纸的烤盘上,烤箱上下火180度预热。
  • 12.烤箱中层上下火180度烤5分钟左右定型。
  • 13.取出烤盘刷上薄薄的一层蛋液。
  • 14.回炉上下火180度烘烤20分钟。
  • 15.成品冷却。
  • 16.装吸塑盒中静待月饼回油。
