南瓜土豆麦饼
第一次用土豆馅做麦饼,还是素馅的,搭配了南瓜丝,鲜香粉糯,也很美味,倒是有点出乎意料*下次试试土豆肉馅的,想来应该更好吃。

    Steps to make 南瓜土豆麦饼

    • 1.嫩南瓜擦成丝,加盐搓软,挤去水分。
    • 2.普通面粉边倒水边用筷子搅拌,一直搅到没有干面粉的团状为止,放置10分钟之后再把面团搅拌光滑,盖保鲜膜饧发两个小时以上。
    • 3.鳞虾清洗。
    • 4.土豆切片蒸熟。
    • 5.压成泥。
    • 6.鳞虾切细,和南瓜丝放在一起。
    • 7.放入土豆泥,加盐、蚝油、蒜泥拌匀。
    • 8.饧发好的面团特别的软,要加点干面粉防粘,把面团分成小份。
    • 9.饧透的面皮延展性很好,放上馅料,像包包子一样收好口,收口朝下放置。
    • 10.先用手轻轻按压,再用饺子棒均匀擀薄,让中间收口的面变薄。把麦饼坯擀得很薄透过面皮都可以看见馅料为止。
    • 11.平底锅烧热后,倒入少许食用油,将麦饼饼坯放入,盖上锅盖,中小火烙制。烙饼时切记火候不能过小,饼在锅中的时间过长,烙出来的馅饼水分会流失,外皮就会变硬。
    • 12.饼变色后翻面再烙,沿锅边倒入适量油。
    • 13.两面烙制金黄,多翻几次看到饼鼓起就可出锅了。
    • 14.切成小块,趁热好吃。
