泰汁甜辣鱼
这个味道有点微辣,酸酸的,带着浓郁的蒜味。很爽口开胃。
口感甜中带辣,鱼的外面还带着酥皮的硬度,里面是软嫩的鱼肉,因为花刀刻得细,所以相当入味。里面特别好吃的还有一种:姜丝,微微甜的姜丝,吃起来像腌的咸菜一样好口感。

    Steps to make 泰汁甜辣鱼

    • 1.鱼刻一字刀,细一点,用盐,胡椒粉,腌渍十分钟。
    • 2.姜切丝,蒜切片。
    • 3.鱼拍淀粉,拍均匀。下六成热油,中火炸微微黄。我家用的菜籽油,真黄啊!还冒泡。
    • 4.炸好的鱼捞出来。
    • 5.油全部倒掉,底下的渣滓不要倒出去。把姜,蒜放进锅里炒一下。
    • 6.放甜辣酱,要多一些,半饭碗的样子。一汤匙番茄酱,一茶匙白糖,中和一下甜辣酱的味道。搅拌均匀,炒一下。
    • 7.兑一碗水,大火烧开。放入鱼。用勺子把汤舀起来浇上去,晃动锅,小火煮一分钟,反面,再来一分钟,捞出来。
    • 8.鱼捞出来摆在盘中。
    • 9.锅里的汁大火熬,并尝尝味道,调入盐,鸡汁。熬到变少,变浓郁粘稠,浇在鱼身上就好了。
