去市场买菜,卖海鲜的老板极力推荐他家的红花蟹,买了2只。现在降价了,一斤45元,2只差不多一斤左右。

Steps to make 香辣蟹

  • 1.2只螃蟹装满一个盘子,还是活的。这时髦的红衣服可真漂亮。
  • 2.准备食材。把青线椒切段,小米辣切圈,蒜头切小块,生姜切丝,青蒜切碎。
  • 3.把花蟹用刷子刷干净,一分为二,去掉蟹腮和蟹胃等不能吃的部位。蟹钳可以用刀拍一下方便入味。
  • 4.切口沾点地瓜粉,这样煎的时候肉和膏不会散。我用的是农家自制地瓜粉,比较粗糙。
  • 5.起锅烧油,油温差不多的时候把花蟹有地瓜粉的那面向下,煎至定型。
  • 6.把煎好的花蟹拨到旁边,中间放入姜蒜炒香。
  • 7.再放入蟹壳,不要翻动。
  • 8.加少量清水,1勺生抽,1勺料酒,轻轻的翻一下。
  • 9.撒上辣椒和青蒜,稍微炒几下。
  • 10.再撒上葱花即可。海鲜本身就有味道,又加了生抽,所以不需要再加盐。
  • 11.成品。非常香,香辣过瘾。
