鱼香冰冻鱼--酸甜美食
鱼香菜,包含了甜、酸、辣、咸,味道多层不单一,也算是甜酸菜,大众喜欢,开胃下饭。本来冰冻鱼就感觉上与新鲜鱼略逊一筹,适合煎炸和焖,清蒸就免了,呵呵。

  • 冰冻罗郭鱼1尾
  • 姜末1大匙
  • 蒜末1大匙
  • 葱花2大匙
  • 菜椒0.5个
  • 精盐1小匙
  • 玉米淀粉1大匙
  • 生抽1.5大匙
  • 白糖1.5大匙
  • 浙醋1.5大匙
  • 胡椒粉0.3小匙
  • 辣椒油1大匙
  • 生粉0.5大匙

Steps to make 鱼香冰冻鱼--酸甜美食

  • 1.把鱼解冻后用清水加盐1小匙,搅拌后泡15分钟,捞起沥水吸干,斜刀划三至四道,用玉米淀粉将鱼里外抹一层包括刀痕里面;
  • 2.准备好姜末1大匙、蒜末1大匙、葱花2大匙、菜椒0.5个切粒;
  • 3.把鱼的两面煎至金黄色,
  • 4.加入清水约1/2杯,煮一煮,时不时翻翻身,让鱼出味;
  • 5.置一碗,放生抽1.5大匙、白糖1.5大匙、浙醋1.5大匙、胡椒粉0.3小匙、辣椒油1大匙、生粉0.5大匙和清水1/2杯做碗汁,搅拌均匀;
  • 6.大火将鱼收汁,水量差不多剩1/3后,转中火,倒入碗汁,烧开,试味;
  • 7.加入红椒粒1/2量,出锅,再撒剩余的红椒粒,Enjoy !
