  • 1.螃蟹洗净从中间一切为二。
  • 2.剪去下关节不要。(这个根据螃蟹大小选择要不要,本来想买梭子蟹的,没买到,就买了小螃蟹)
  • 3.去壳,去肺。两只大也剪下。都放在一起,一会儿重点清洗一下。
  • 4.切口沾一下淀粉。
  • 5.全部处理好备用。
  • 6.锅里适量油烧五成热,切面朝下,一个一个放进去。我分了两锅底炸制。
  • 7.炸至金黄。
  • 8.捞出。
  • 9.蟹钳也过一下油。
  • 10.炸好的螃蟹和蟹钳。
  • 11.锅里适量油,花椒,麻椒,辣椒,香叶,冰糖,葱姜蒜放入。
  • 12.翻炒几下。
  • 13.适量火锅底料,郫县豆瓣酱。
  • 14.炒出红油。
  • 15.炸好的螃蟹倒入。
  • 16.翻炒几下。
  • 17.适量盐,生抽,蚝油,鸡精调味儿。
  • 18.再次翻炒酱料均匀包裹住螃蟹。
  • 19.大半瓶啤酒。
