芒果冰激凌
这款芒果冰激凌用的君之老师的方子,简单易做,口味很不错,下面的材料用量是君之老师的原配方,我做的时候减了一半的量,如果家里人比较多建议用原配方的用量就可以了!

  • 牛奶200ml
  • 蛋黄1个
  • 芒果140克
  • 柠檬汁12g
  • 细砂糖85g

Steps to make 芒果冰激凌

  • 1.芒果取出果肉140克
  • 2.一个蛋黄、65克细砂糖、200毫升牛奶全部倒入奶锅,搅拌均匀
  • 3.奶锅一定要小火加热并且用刮刀不停地搅拌,直到奶液受热开始有点儿气泡并要沸腾的趋势,立即离火,千万不要煮沸。
  • 4.离火后,立即倒入淡奶油一边倒一边搅拌均匀,滴入少许香草精,搅拌均匀后放一边凉透备用
  • 5.芒果肉放料理机打成泥,一定要全部打碎打的越细,做出来的冰激凌越细腻,在芒果肉里加入柠檬汁,和剩余砂糖,搅拌均匀后放冰箱冷藏一小时。
  • 6.冷藏后的芒果泥倒入奶液中搅拌均匀。
  • 7.倒入容器里,可以用大碗也可以用保鲜盒,只要能放入冰箱冷冻室的容器都可以,用打蛋器搅打均匀后放入冰箱冷冻!
  • 8.冰激凌液冷冻到开始有点结冰后(大约1小时)取出来用打蛋器搅打片刻,放入冰箱继续冷冻。
  • 9.半小时后取出搅打均匀后放入冰箱继续冷冻
  • 10.半小时一次重复总共4-6次(我是搅了四次)后放冰箱冷冻至变硬,冰激凌就做好了
