  • 3.关键的一步,过滤蛋液,蛋液过滤后,蒸出来的蛋羹才细腻嫩滑。准备好容器,放入处理好的虾仁,直接将蛋液过滤到容器中,我是用过滤豆浆的网筛过滤的,剩下的是泡沫和没有搅打碎的蛋清。
  • 4.今天用的是搪瓷锅,试试电陶炉的火力怎么样,搪瓷锅加入适量的水,放上支架,将过滤好的蛋液放在支架上。
  • 5.通常最好盖上保鲜膜,家里没有保鲜膜了,直接放入锅中蒸,大火烧开蒸7分钟。感觉使用搪瓷锅,加热速度更快。烧开后可以降低温度至4挡。
