红豆肉松红糟软欧包
这款是山寨原麦山丘的谷早味肉松红豆包,虽然没有黄油,糖量也低,但是由于加入了老面,面包同样柔软,而且加入了肉松豆沙,用了红曲酒糟颜色好看还营养!是我喜欢的一款软欧面包!

  • 高粉200克
  • 全麦粉50克
  • 小麦胚芽30克
  • 100克
  • 红糖35克
  • 3克
  • 酵母3克
  • 红曲酒糟50克
  • 老面200克
  • 豆沙馅150克
  • 肉松20克
  • 咸蛋黄4个

Steps to make 红豆肉松红糟软欧包

  • 1.咸蛋黄放入烤箱烤熟压碎
  • 2.放入肉松,搅拌均匀备用(其实只要用肉松,我是为了消耗剩下的4个人咸蛋黄)
  • 3.老面(高粉100克、水100克、酵母1克混合)发酵15小时,把所有的食材放入搅拌桶中开始和面
  • 4.揉至可以拉出大片的薄膜状态
  • 5.放在温暖环境下发酵至2倍大
  • 6.轻轻排气后,先分割出3个25的小面团,剩下的平均分割成3个面团,滚圆松驰20分钟
  • 7.取1个大面团擀成长方形
  • 8.放上蜜红豆和肉松
  • 9.从上往下卷起来,整成橄榄形
  • 10.将小面团搓成长条,粘上芝麻
  • 11.剪开
  • 12.面团上喷点水,然后摆放在面包上做装饰
  • 13.烤箱内放盘热水,再把面团放在里面发酵至两倍大
  • 14.烤箱预热200度,中层烤20分钟左右,烤好后马上出炉放在冷却架上放凉
  • 15.完成
