自制五仁月饼
五仁月饼是各式月饼中最为著称的,因馅中有杏仁、桃仁、花生仁、麻仁和瓜子仁而得名。它具有配料考究、皮薄馅多、味美可口、不易破碎、便于携带等特点。 这种月饼,呈鼓形,边稍鼓出,花纹和字迹清晰,形状端正,不破皮,不露馅,边角分明;表面金黄色,无白点,色泽均匀,具有油脂光泽,边缘呈象牙色,底面棕红色。口味香甜,绵软带酥,有多种果仁香味。
这次的五仁馅月饼是为老妈做的,因为在她看来五仁馅的才是传统的月饼,其他口味的都不算是月饼,但在我看来家里的老一辈的都是比较喜欢吃传统些的食物,就如粽子,汤圆,豆腐脑都必定吃甜味的,但让我选择的话会选择咸味的,这一切也都表明我这辈和爸妈那辈的口味都有很大的不同。。
这次做的五仁馅材料都是选自老妈喜欢的材料而做的,里面的用料和卖的五仁馅有着很大的区别,如果是卖的那种五仁馅我都是不带吃的,但这次自己用材料搭配做五仁月饼,让我不喜欢五仁馅的月饼都爱上吃了,甚至是和蛋黄馅的一样喜欢。。。

  • 五仁馅:瓜子仁100g
  • 桔饼丝50g
  • 菠萝丝40g
  • 花生65g
  • 黑芝麻30g
  • 松仁30g
  • 核桃10g
  • 白糖70g
  • 植物油30ml
  • 白酒10ml
  • 80g
  • 熟糯米120g
  • 月饼皮:低筋粉100g
  • 月饼皮:吉士粉5g
  • 月饼皮:转化糖浆70g
  • 月饼皮:花生油25g
  • 月饼皮:碱水1g

Steps to make 自制五仁月饼

  • 1.备好材料。
  • 2.锅烧干,烧热,倒入糯米炒至发黄,吃起来不带生味即可。
  • 3.瓜子仁倒入锅中炒至焦黄即可。
  • 4.黑芝麻炒熟,花生在锅中炸熟即可。
  • 5.材料中大些的材料切碎,都倒入盆里,再倒入白糖70g,植物油30ml,白酒10g,水80g搅拌均匀。
  • 6.再分次的倒入熟糯米,直到馅能揉成团,软硬适中为止。
  • 7.转化糖浆70g,花生油25g,碱水1g倒入盆里搅拌均匀。
  • 8.倒入低筋粉和吉士粉搅拌。
  • 9.揉成团,室温放置1小时。
  • 10.五仁一个为57g揉成团,皮一个为18g揉成团。
  • 11.取一个皮,放入一个五仁馅。
  • 12.从下往上推。
  • 13.包起来。
  • 14.模子里倒入些面粉,转几圈再倒出来,放入馅轻轻按扁。
  • 15.压出月饼来。
  • 16.放入烤盘里,撒上少许水,先以180°烤5分钟。
  • 17.拿出来刷层蛋液再烤15分钟即可。
