其实这道菜来源于广东菜品酿香菇!我今天是换成了酿木耳,趁着特价买了点单片无根的小碗耳,泡发好后,发现外形看着象一个个小碗,盛装着满满的食物,有着盆满钵满的寓意,感觉用来做年菜不错!用虾仁自制了点虾胶酿在里面,再配了点菜心,荤素搭配,口感丰富!

  • 小菜心100g
  • 橄榄油少许

  • 六月鲜酱油2勺
  • 蚝油1勺
  • 砂糖半小勺
  • 料酒2勺
  • 白胡椒粉少许
  • 香油少许

Steps to make 【广东】酿木耳

  • 1.虾仁处理干净后用刀背压成泥状
  • 2.再剁剁匀后放入碗中加入料酒、盐和白胡椒粉
  • 3.拌均匀后,再搅上劲成虾胶备用
  • 4.小菜心洗净
  • 5.放入开水中绰熟,加点盐和油
  • 6.捞出沥干水分后摆盘
  • 7.单片无根小碗耳用水提前浸泡好
  • 8.取一片小碗耳里面粘上一层薄薄的淀粉
  • 9.把虾胶酿在里面
  • 10.这是酿好的
  • 11.锅中加少许油加热,把虾胶面朝下煎熟
  • 12.加点料酒、六月鲜酱油和蚝油
  • 13.加点砂糖翻炒均匀后淋上香油拌匀
  • 14.把木耳酿虾胶放在菜心上,再淋上锅中剩下的汁水即可
