春节家宴喜庆硬菜系列四------[红红火火油焖大虾]
油焖大虾是鲁菜中最经典的一道菜,这道菜对原材料的要求比较严格,最好选用黄、渤海产野生大对虾,对虾的得名是由于这种虾个头大,常以“一对”为单位来计算售价而得名的,大点的对虾一市斤只能称两只,我们当地人称这种虾叫“两头的”,同理一市斤称三只、四只的就叫“三头的”、“四头的”,这种虾以个大、肉肥、色鲜、蛋白质含量高、味道鲜美闻名于世,是世界上最优良的虾类品种,所以用此虾作出来的油焖大虾甜香鲜美,壳酥肉嫩,色泽红亮,在春节的餐桌上是最受欢迎的一道菜,同时也是最最重量级的一道菜,吃了这道菜,寓意着新的一年红红火火、蒸蒸日上!

Steps to make 春节家宴喜庆硬菜系列四------[红红火火油焖大虾]

  • 1.主料:渤海野生大对虾6只
  • 2.副料:大葱、姜片调料:黄酒、番茄酱、生抽、盐、糖、
  • 3.将大虾的背部虾壳剪开,挑去虾背中的虾线
  • 4.用剪子将虾腿和尾部的尾刺剪干净
  • 5.锅中做油,油温7成热时,将大虾入锅炸制虾壳酥红
  • 6.炸制虾壳酥红捞出备用
  • 7.锅中留少许油,将大葱、姜片入锅煽炒,炒制出香味后,将佐料捞出
  • 8.倒入番茄酱,小火炒香、炒出红油
  • 9.将炸好的大虾入锅炒制
  • 10.将生抽、盐、糖混合搅匀,一起倒入锅中
  • 11.再烹入适量黄酒
  • 12.加入少量清水,变小火焖制5分钟、待锅中汤汁浓稠后捞出大虾装盘;将锅中的汤汁再收得浓一些后淋在盘中的大虾上即可
