Steps to make 【四川】】姜汁热窝鸡

  • 1.鸡块冷水下锅,煮10分钟去除血水
  • 2.将鸡肉捞出沥水
  • 3.姜剁末,大葱切丝
  • 4.油烧热,将鸡肉倒入锅中将水分炒干
  • 5.放入豆瓣酱、老抽翻炒均匀
  • 6.锅中加水,没过鸡肉
  • 7.大火烧开后转中火继续烧,放入姜末和鸡肉一起煮
  • 8.放入少许食盐调味,煮15分钟左右
  • 9.煮鸡肉的同时用芡粉、醋、白糖、水调成芡汁勾芡,把切好的大葱也一同放入芡汁中
  • 10.鸡肉煮熟后将芡汁倒入锅中炒匀,最后撒上葱花起锅
