双色蛋糕卷

  • 玉米油40克
  • 白醋几滴

Steps to make 双色蛋糕卷

  • 1.蛋黄、牛奶70克、玉米油搅拌均匀。
  • 2.加入低粉(提前过筛两遍)。
  • 3.切拌均匀。
  • 4.蛋白加几滴白醋,打至醋泡,再分三次加入白糖,打发至如图4所示状态。
  • 5.取1/3蛋白加入蛋黄糊中,搅拌均匀。再把蛋黄糊倒入剩余的蛋白糊中。
  • 6.翻拌均匀。
  • 7.可可粉加入10克牛奶,搅拌均匀。
  • 8.取一半蛋糕糊加入可可糊快速拌匀。
  • 9.用裱画袋把原味蛋糕糊及可可糊交错挤在烤盘(烤盘提前垫好油纸)上。放入烤箱,中层,上下火,165度30分钟。蛋糕糊挤得不好,最后都混在一起了。出炉后,把蛋糕从烤盘移到烤网上,把四周油纸撕下,稍稍晾下。
  • 10.烤面朝上,卷起来,冰箱冷藏半小时以上,即可切块。
