Steps to make 膏蟹蒸肉饼

  • 1.猪大腿肉先切成片,再切成条,切成丁,最后剁成肉粒。
  • 2.马蹄削皮,用刀拍碎,不要切。
  • 3.香菇切丁。
  • 4.处理螃蟹,从肚子切开,不要弄破背壳,按住蟹腿,把壳剥开。清理蟹壳,把螃蟹的胃去掉,肺也用手剥赶紧,轻轻冲洗一下。
  • 5.修剪蟹钳锋利的位置,免刮伤。
  • 6.在蟹钳的第一关节处,分离蟹钳,拍裂外壳。
  • 7.将蟹肉分成等份。
  • 8.把蟹膏、蟹水,取出装碗备用。螃蟹就处理完成了。
  • 9.在肉里放一点盐,倒入蟹汁。
  • 10.放入一点点料酒,适量生抽,少许糖,胡椒粉少许,再加入两勺生粉。加入一些蟹黄。
  • 11.再加入马蹄和冬菇,快速搅匀。
  • 12.反复摔打,增加韧性,大概摔打十下。
  • 13.在盘底摸上食用油(花生油),以免粘盘。
  • 14.把肉放入盘中,压的均匀一些,使受热均匀,然后在中间挖一个孔加快受热。
  • 15.螃蟹摆盘,放入蒸箱 蒸五分钟。
  • 16.倒入蟹黄,第二次蒸,一分钟。
  • 17.里面会有很多汁水,把汁水倒入碗中,调味。
  • 18.在汁水中加入料酒和生抽,再浇到菜品表面。
  • 19.最后滴一点花生油在蟹壳上就完成了。
