  • 荷兰豆150克
  • 胡萝卜1小段
  • 小米辣2个
  • 食用油2勺
  • 葱姜少许
  • 蒜头2瓣
  • 料酒1勺
  • 生抽1勺
  • 蚝油1小勺
  • 食盐1小勺
  • 生粉1小勺
  • 老抽半小勺
  • 白糖半小勺

Steps to make 荷兰豆炒肉丝

  • 1.备好全部食材。
  • 2.荷兰豆撕去两侧筋膜,清洗干净后从中斜刀切半,放一旁备用。
  • 3.配菜洗净,葱姜蒜切末,小米辣切圈,胡萝卜切片。
  • 4.精瘦肉洗净,切丝放至碗中,加入少许的葱姜蒜、食盐、白糖、料酒、蚝油、生抽、老抽和生粉。
  • 5.用手抓拌均匀,表面淋少许食用油,锁住水分,腌制10分钟。
  • 6.起锅烧水,水开,加入半小勺的食盐和食用油。
  • 7.放入荷兰豆和胡萝卜,焯烫至荷兰豆变色。
  • 8.捞出,迅速过凉水,沥干。
  • 9.炒锅烧热,倒入食用油,下入葱姜蒜爆香,放入腌好的肉丝。
  • 10.大火翻炒,炒至肉丝断生、变色。
  • 11.放入小米辣、荷兰豆和胡萝卜,翻炒均匀;口味重的,这时也可以加适量的盐,我家吃的味淡,就没加盐了。
  • 12.出锅前淋入少许淀粉水,炒匀即可。
  • 13.关火,盛入盘中。
  • 14.荷兰豆清脆爽口,瘦肉丝油润嫩滑,再配上小米辣,真的好看又好吃。
