维也纳巧克力/乌梅面包

Steps to make 维也纳巧克力/乌梅面包

  • 1.将主料(除了盐、黄油之外)放入面包机和面15分钟,酵母放在最上面,起筋之后加入盐,
  • 2.第2次起动和面15分钟加入黄油
  • 3.进行第一次发酵90分钟
  • 4.发酵之2-3倍取出
  • 5.分二团,一团摊平加入巧克力
  • 6.另一团放入乌梅干
  • 7.揉圆之后称量切割
  • 8.105g左右6个团,揉圆
  • 9.进行第二次放松发酵30分钟
  • 10.揉长压平
  • 11.向下三分之一处压紧
  • 12.揉橄榄长形
  • 13.放入烤箱进行第三次发酵40分钟
  • 14.用刀划造型
  • 15.烤箱预热5分钟,用couss烤箱,上温190度,下温200度,烤制20分钟,中间换位喷点水
  • 16.咬到巧克力,软心感觉很不一样
