农家小炒肉
介绍一个湘菜,北京生活台教的,吃不到正宗的,吃个类似的也不错。不过我没买到杭椒,用尖椒替代的,估计和这个有关系,还有青蒜,我拿大葱替代的。下回一定材料全了再做,味道会更好。

    Steps to make 农家小炒肉

    • 1.五花肉和里脊肉各一半。稍微冷冻一下,比较好切。肉要切成片,薄厚均匀。
    • 2.五花肉要先去皮,再切片。
    • 3.切好的五花肉和里脊肉。
    • 4.杭椒对半切,或者斜切。
    • 5.红椒切小块。
    • 6.美人椒切小圈。
    • 7.大蒜切片。
    • 8.香菜和青蒜切段。
    • 9.锅中放少许油,烧热后改中火。
    • 10.把五花肉放进去,煸炒,尽量把五花肉的肥油给煸炒出来。
    • 11.然后将金黄色的五花肉盛出。
    • 12.锅中留油,将里脊肉片放进去煸炒变色。
    • 13.此时,将炒好的五花肉再放入锅里,一起炒。
    • 14.加入适量的生抽和老抽。
    • 15.待肉7成熟时,加入大蒜片,杭椒,红椒,美人椒,将火调大。
    • 16.不断的铲压材料,煸炒出香味儿。
    • 17.将豆豉和青蒜倒入,略炒。(青蒜不要炒过头。)然后,加入盐和味精调味,可再加入少许料酒提香。
    • 18.最后,加入香菜段,翻炒几下,即可出锅。
