大葱烧海参
通常酒店里做海参,都是整只来烧,或者团团围在大盘里,取团圆喜庆之意;或者装进小碟,一客一只端到客人面前。不论摆成啥样,看上去都挺高级的,价格当然也挺高档的。自己在家做,成本虽然也不低,但是无论节庆还是宴客,吃起来总是实惠一些,而且也不必烧成一整只一整只的,切开了烧,更入味啊。不要嫌奢侈,反正咱也不天天儿吃——

  • 海参8只
  • 大葱白200g
  • 熟猪油2大勺
  • 鸡汤250ml
  • 1/4小勺
  • 酱油1大勺
  • 白糖少许

Steps to make 大葱烧海参

  • 1.海参切成大片;
  • 2.葱白切成约5cm的大段,姜切丝;
  • 3.海参凉水入锅,大火煮开,烧5分钟,捞出沥干水分备用;
  • 4.小锅内加入猪油,烧至5、6成热时加入葱白,小火慢慢炸至金黄色,关火;
  • 5.捞出葱段备用,葱油留用;
  • 6.另起锅,加入姜丝、盐、料酒、酱油和糖,大火烧开;
  • 7.加入海参;
  • 8.加入葱段;
  • 9.再次烧开后转微火,煨2、3分钟;
  • 10.转大火,少量多次加入水淀粉(大约1大勺)勾芡,转中火烧透收汁;
  • 11.淋入葱油,关火。
