猫爪蛋糕

Steps to make 猫爪蛋糕

  • 1.全部材料准备好;
  • 2.鸡蛋打入法焙客玻璃打蛋盆中,将白糖全部加入,用电动打蛋器中速打发;右手握着打蛋器顺时针转动,左手不时地逆时针转动打蛋盆,使蛋液得到充分打发;
  • 3.待蛋液打得体积膨胀,颜色变浅黄色时,关掉电源,提起打蛋器,蛋液垂落下来后痕迹不轻易消失,打发结束;此时烤箱开始预热,150度上下火;
  • 4.用刮刀挖出一小块蛋糊来,将2克的可可粉和3克左右的面粉筛入其中,混合均匀,不用放油了;
  • 5.将面糊入裱花袋中,挤在不粘模具的猫爪子和爪心部位,送入烤箱中烤一分钟后取出;
  • 6.将57克的面粉筛入剩下的鸡蛋糊中,用“J”字型方向,从下向上翻拌均匀;此时蛋糊会消泡,所以手法一定要轻而快,千万不要划圈搅拌;
  • 7.倒入15克左右的橄榄油;
  • 8.继续用“J”字型方向,从下向上翻拌均匀,呈细腻有光泽的蛋糕糊;
  • 9.烤了一分钟的小猫爪鼓鼓的很漂亮;
  • 10.用小勺将蛋糕糊舀入其中,盖住小爪子,有9分满;
  • 11.送入预热好的烤箱中层,150度,上下火,18分钟,剩下的蛋糕放在两个纸杯模具中即可;出炉后无需倒扣,趁热将猫爪蛋糕翻个身,在模具中晾凉后入袋中保存。
  • 12.萌萌的猫爪小蛋糕,少油少糖,暄软可口!
