奶油卷蛋糕

  • 鸡蛋4个
  • 牛奶60克
  • 植物油30克
  • 白糖60克(B)
  • 低筋面粉90克
  • 食盐1克
  • 柠檬汁1/2小勺
  • 淡奶油100克
  • 白砂糖15克

Steps to make 奶油卷蛋糕

  • 1.水、植物油、白糖30克一起在盆里搅拌至糖化,筛入低筋面粉,搅拌均匀;
  • 2.鸡蛋4个,用个无油无水的盆把蛋清和蛋黄分离;
  • 3.蛋黄加入步骤2的面糊中,搅拌均匀;
  • 4.蛋清中加入食盐、柠檬汁,分两次把白糖(B)加入蛋清中打发至中性发泡;
  • 5.蛋白和蛋黄糊分两次翻拌均匀;
  • 6.将蛋糕糊倒入铺有烤纸的烤盘上,用刮板或刮刀抹平;
  • 7.放入上下火190/170°C预好的烤箱中层,约烤15分钟;
  • 8.取出烤好的蛋糕,震盘、倒扣出来,撕下烤纸,放凉;
  • 9.淡奶油加15克白砂糖搅拌至8成发;
  • 10.蛋糕放在烤纸上,烘烤面涂抹上适量的奶油;
  • 11.把蛋糕卷起来,并放置15分钟定型;
  • 12.打开烤纸,切去边角,把蛋糕切成4cm的蛋糕片,并挤上奶油,装饰水果!
