酱香卤鸡腿❗️酱香浓郁咸鲜入味,宴客菜
中秋月圆人团圆,家坐标河南郑州,八月十五的月亮十六圆,一般大家庭选择在十六进行家庭聚餐,凉菜热菜,卤菜必不可少,卤肘子,耳朵,鸡爪鸡腿等,今天制作了酱香卤鸡腿,酱香浓郁,百吃不腻,老少皆宜。

  • 干辣椒2个
  • 草果1个
  • 八角2个
  • 豆瓣酱1勺
  • 甜面酱1勺
  • 冰糖6粒
  • 白胡椒粉2g
  • 料酒2勺
  • 老抽1勺

Steps to make 酱香卤鸡腿❗️酱香浓郁咸鲜入味,宴客菜

  • 1.准备主要食材:琵琶腿6个,小葱,生姜,辣椒,草果,八角,甜面酱,豆瓣酱。
  • 2.锅中放入适量的水,鸡腿凉水入锅,放姜片,小葱,料酒2勺。
  • 3.水开后煮三分钟,煮出鸡腿的杂质和血沫,捞出来,用厨房用纸擦除表面水份备用。
  • 4.锅中加少许底油,放入4粒冰糖化开,冰糖起深色细泡泡放入鸡腿。
  • 5.把鸡腿炒出满意的糖色后关火。
  • 6.砂锅中放入鸡腿,加一勺葱伴侣豆瓣酱。
  • 7.一勺葱伴侣甜面酱。
  • 8.一勺老抽提色,加盐,冰糖,白胡椒粉,草果,八角,干辣椒段,倒入热开水,水量至少没过鸡腿。
  • 9.水开后转中小火炖25分钟左右。
  • 10.炖好以后不要马上捞出来,在汤汁中浸泡2个小时以上更入味。
  • 11.一道宴客聚餐的家常卤味制作完成。
  • 12.酱香浓郁,咸香入味。
