绿豆面包卷

  • 奶粉8g
  • 蛋液20g
  • 110g
  • 无盐黄油20g
  • 3g

Steps to make 绿豆面包卷

  • 1.把所有材料放入大盆里,用筷子搅拌成团
  • 2.把面团移到揉面垫上进行手工和面
  • 3.刚开始面团比较粘手,不要随意加粉,用手碗的力量进行和面,你就会发现面团越来越光滑,检查一下,已可以拉出粗粗的膜
  • 4.这时候可以加入室温软化的无盐黄油,(这就是书上说的后油法)包在面团中间,继续和面
  • 5.把面团和光滑,可拉出大块透明的薄膜,和面完成
  • 6.把面团收圆,放入盆子里,盖上保鲜膜进行基础发酵2—2.5倍大
  • 7.发酵好的面团,分割为5份,滚圆后盖是保鲜膜松弛15分钟
  • 8.取其中一份面团,擀开,翻面后在上面铺上一层绿豆馅,下面纵切为条状
  • 9.把它卷起来,像毛毛虫的样子
  • 10.把头尾两端接起来,捏紧收口即可
  • 11.依次做好,摆入烤盘,第二次发酵好以后刷上蛋液
  • 12.放入预热好的烤箱,175度,中层,上下烤,热风,15分钟左右(时间温度供参考)
