Steps to make 蘸水面

  • 1.面粉加适量的盐
  • 2.原材料
  • 3.西红柿切丁,葱切段蒜切片,其余的蒜用捣蒜罐捣成蒜泥
  • 4.面粉中陆续加水,和成软硬适中的面团
  • 5.将面团放在案板上继续揉
  • 6.揉成如图的形状
  • 7.用手揪成大小均匀的剂子
  • 8.再揉成条状
  • 9.四周刷上油
  • 10.覆盖保鲜膜饧40分钟
  • 11.坐锅热油,油热后关火两分钟。再用勺舀部分油
  • 12.泼入蒜罐中
  • 13.原锅留油,炝入葱蒜再倒西红柿·
  • 14.放盐、五香粉炒匀
  • 15.再倒一碗水开后煮几分钟关火
  • 16.小碗中放辣子油,加油泼过的蒜泥
  • 17.调入盐、醋、酱油和西红柿汁
  • 18.取一条饧好的面,用手压扁(案板上刷油)
  • 19.用擀杖擀成片
  • 20.用擀杖擀成片
  • 21.用双手轻扯
  • 22.扯至30厘米左右
  • 23.全部扯好
  • 24.轻轻扯长下入开水锅中
  • 25.面条入锅煮,中间点次凉水快熟时下青菜
  • 26.煮熟的面条捞入凉开水中,食用时蘸汁即可
