  • 1.准备好材料
  • 2.虾去壳去头尾去虾线,一半剁成茸,一半切成粒,葱姜切成末
  • 3.将葱姜末泡在香菇水里,将姜和葱尽量捏成茸,让葱姜味渗入香菇水中
  • 4.虾茸用盐、胡椒粉、美极鲜、老抽、葱姜汁搅拌均匀
  • 5.虾仁用盐、胡椒粉、美极鲜、老抽、水淀粉、葱姜汁搅拌均匀
  • 6.肉末用盐、胡椒粉、美极鲜、老抽、葱姜汁搅拌均匀
  • 7.茭白切成片后,放开水中焯水
  • 8.焯过水的茭白切成小粒,用盐、胡椒粉、美极鲜、老抽、搅拌均匀后,将虾茸、虾仁、肉末、茭白混合在一起搅拌均匀成虾馅
  • 9.盆中放入150克淀粉,加入300克开水,一边加水一边搅拌
  • 10.再加入少量淀粉后和成光滑的面团,盖上布饧30分钟
  • 11.饧好的面团,搓成长条后切成大小合适的面剂
  • 12.案板上涂上一层油,菜刀也涂上油,将面剂按扁后用菜刀压成面皮
  • 13.面皮上放上馅料
  • 14.包成饺子
  • 15.蒸笼涂上一层油,放入虾饺,大水烧开转中小火蒸8分钟,焖5分钟即可装盘
