Steps to make 香煎玉米面爆浆小馒头

  • 1.备好面粉。
  • 2.准备好所用配料。
  • 3.玉米面用开水少量多次加入烫成图中小块,待温度不烫手了打入一颗鸡蛋,放入酵母粉,小苏打和糖,再加入白面。
  • 4.加入白面后少量多次加入温水,至图中状态加入少许油。
  • 5.揉成光滑柔软的面团盖盖子醒发至有蜂窝状态。
  • 6.发至这种状态就可以了。
  • 7.面团放撒有白面的案板上揉面排气,揉至没有气泡就可以了。
  • 8.把面切出长条。
  • 9.在分成等份的剂子揉成比汤圆大一圈的圆球。
  • 10.把玉米面球擀成0.5厘米薄厚的原片,把汤圆放在中间。
  • 11.用左手托起面皮,右手虎口轻轻转动着往汤圆上方收拢。
  • 12.最后把小口捏在一起。
  • 13.捏口朝下像图中方式整理一下面团成圆形。
  • 14.都包好后,不粘锅刷层油,凉锅把小馒头放入锅内,然后中火煎至。
  • 15.煎至听到滋滋的声音,拿起一个底部产深黄。
  • 16.把火开到大火挡,就可以沿着锅边倒入凉水至馒头的一半高度。
  • 17.盖锅盖中大火,五分钟后直到锅内水没有了,馒头增大了一倍就可以出锅了。
  • 18.底部金黄酥脆的爆浆小馒头就可以开吃咯。
