又到一年月圆时-----自制白芸豆豆沙
中秋一天天临近了,今年准备再做款豆沙月饼,因为红豆沙和绿豆沙比较多见,所以尝试做了白芸豆豆沙,味道挺好,口感非常细腻,很喜欢。

好纠结,今天说停水,打定主意就不出门了,就在家里做美食拍照,把昨天做的豆沙照片整理好了,上午忙着做月饼,照片还在整理中,结果到现在也没停,又在想是不是还是出去逛逛。

芸豆营养丰富。据测,每百克芸豆含蛋白质23.1克、脂肪1.3克、碳水化合物56.9克、胡萝卜素0.24毫克、钙160毫克、磷410毫克、铁7.3毫克及丰富的B族维生素,鲜豆还含丰富的维生素C。芸豆粒大饱满、质地细腻,富含沙性,食法多样,可煮可炖,作豆馅、豆沙,做汤菜、烧肉、制罐头或冷饮、糕点、甜食小吃等均相宜。

芸豆的药用价值很高。我国古代医籍记载,味甘平,具有温中下气、利肠胃、止呃逆、益肾补元等功用,是一种滋补食疗佳品。芸豆还有镇静作用,对治疗虚寒呃逆、胃寒呕吐、跌打损伤、喘息咳嗽、腰痛、神经痛均有一定疗效。芸豆还是一种高钾低钠食品,很适合于心脏病、动脉硬化、高血脂和忌盐患者食用。现代医学分析,芸豆粒含有血球凝集素等多种球蛋白。

Steps to make 又到一年月圆时-----自制白芸豆豆沙

  • 1.白芸豆提前一夜浸泡,我大概泡了15个小时。
  • 2.泡好的豆子撕去外皮,重新清洗干净,放入清水炖煮。
  • 3.直到豆子软烂。
  • 4.把多余的水倒掉,放凉。
  • 5.用搅拌机搅成细腻的泥状。
  • 6.把搅拌好的豆沙倒入平底锅内,小火慢炒,感觉水份蒸发,有点干的时候,加少量的油,继续炒,共加油三次即可。
  • 7.最后炒到感觉阻力越来越大,放入适量的糖,再炒片刻即可。
  • 8.炒好的豆沙放入密封盒里,凉后入冰箱冷藏保存。
