扬州春卷
扬州春卷是江苏扬州著名的汉族小吃,春令食俗。春卷由春饼演变而来,创始于唐代,至明代扬州开始有专营春卷的店铺。清代有诗入赞扬州春卷曰:“调羹汤饼佐春色,春到人间一卷之”。春卷的馅料随着四季的不同而有所变化,如荠菜馅、韭菜馅、豌豆馅等。
非常喜欢韭黄的味道,无论是炒还是做成馅料,都是特别提味的一道食材。现在正是韭黄上市的季节,将它做成春卷,真的是非常美味。

  • 白胡椒粉1g
  • 玉米淀粉8g
  • 1g
  • 鸡精1g

Steps to make 扬州春卷

  • 1.新鲜冬笋去壳后洗净煮10分钟,再切成丝
  • 2.韭黄洗净后切寸段
  • 3.胡萝卜切丝
  • 4.碗中放入3g玉米淀粉,再兑适量清水调匀备用
  • 5.猪里脊肉切丝,并放入1g盐、料酒、少许白胡椒粉、5g玉米淀粉,倒入少许清水搅拌均匀
  • 6.锅中倒油,油热后倒入肉丝,中火煸炒
  • 7.炒至肉丝变白倒入笋丝,并调入生抽、1g盐、糖
  • 8.煸炒一会后倒入适量水,盖上锅盖焖2分钟
  • 9.放入胡萝卜丝,并调入1g盐和鸡精翻炒片刻
  • 10.倒入步骤4中的水淀粉进行勾芡,炒匀后即可关火
  • 11.盛入碗中待其放凉,拌入韭黄,再撒点白胡椒粉拌匀备用
  • 12.取一张春卷皮铺平,把馅料放在下面
  • 13.卷到1/3处
  • 14.将左右两端折叠过来
  • 15.顺势卷到头就可以了
  • 16.下入五到六层热的油锅中,炸至金黄即可出锅
  • 17.吃的时候可以沾点醋,或自己喜欢的蘸料,非常美味呢!
