很久没有做过中种面包了,主要是因为我懒得弄中种面团…… 不过说真的,中种的面包真的是很软,放置到第2天还是一样好吃。这次做好的面包,拍了过程图,因为没空,本来不打算拍成品图了,,已经到了第3天,。看到它还剩下几片,就一并记录了吧

Details of ingredients

  • 高粉175g
  • 100g
  • 酵母粉3g
  • 高粉75g
  • 牛奶20g
  • 全蛋液20g
  • 细砂糖38g
  • 3g
  • 无盐黄油20g

  • 时间三小时

Steps to make 中种土司

  • 1.将中种面团的材料混合成团
  • 2.装入已抹油的保鲜袋内,挤出空气,扎好封口,放室温发酵1小时后转放入冰箱冷藏12小时
  • 3.主面团材料除黄油外,放入面包桶
  • 4.取出冷藏好的中种面团,撕成块放入,启动和面15分种
  • 5.加入软化的黄油,再和面15分种
  • 6.检查一下膜,到完全阶段啦
  • 7.发酵到2倍大
  • 8.取出排气,分为2份(整形随意),松弛15分钟
  • 9.擀开,抹上喜欢的馅料(这个面团有点粘手,整形时可撒些手粉哦)
  • 10.卷起,放入模具内
  • 11.2次发酵2倍大,刷上蛋液
  • 12.放入预热好的烤箱 ,170度 下层 55分钟(请根据自家烤箱脾气调温度,时间),上色后记得盖上锡纸
  • 13.吃剩下放置了3天的面包片,还是一样软
