虾油海鲜面
这碗面主要突出的是:汤的鲜甜及虾油的香。简单易做,是个营养均衡的理想早餐。

  • 鸡精半茶匙
  • 胡椒粉半茶匙

Steps to make 虾油海鲜面

  • 1.鲜虾去壳,并在虾背上划上一刀,取出虾线洗净(可将鲜虾放冰箱冷冻十分钟后,再取出剥壳就不会沾肉)。
  • 2.炼虾油:先将头壳洗净,放入锅中炒干水份后再下油炒至焦香,这也是这碗面的精华。
  • 3.当炒至焦香味时加入3~4碗水大火烧开。
  • 4.同时另锅烧开水,放入竹升面煮约二分钟后,捞出控干水份后放碗中待用。
  • 5.将虾皮大火煮十分钟后,过滤掉杂质。
  • 6.加盐、鱼露、鸡精、胡椒粉,放入虾仁烧开后再煮约二分钟,加入香油关火(也可加入鲜鱿、沙白之类的海鲜)。
  • 7.浇在煮好的竹升面上,加入烫熟的青菜及香菜段即可,一碗极具潮汕风味的虾油海鲜面,你也可以在家试试做。
