枣泥无花果月饼
材料:(原方来自君之)

饼皮:中筋面粉100克,奶粉5克,转化糖浆75克,枧水1克,冷榨花生油25克

枣泥:大红枣500克,白糖200克,冷榨花生油160克,糕粉(熟糯米粉)80克,泉水适量

表皮刷蛋液:蛋黄1个 蛋白1大勺调匀即可

Steps to make 枣泥无花果月饼

  • 1.大红枣500克洗净
  • 2.用刀去核后放入蒸锅
  • 3.大火烧开蒸15分钟
  • 4.将蒸熟的枣放入食品料理机,放入少许泉水,打磨成浆
  • 5.将枣泥浆用筛子过滤(滤除枣皮),将过滤好得到的枣泥浆放入不粘锅里,加入白糖,小火加热熬煮
  • 6.油分三次加入,逐渐熬到有点粘稠
  • 7.放入糕粉翻炒均匀
  • 8.炒到能捏成不沾手的团即可,盛入碗中晾凉
  • 9.洗净的无花果和葡萄干
  • 10.把枣泥摊开,平铺上葡萄干卷起即可
  • 11.取30克枣泥平摊开,放入无花果(每个重5-7克)
  • 12.捏紧团圆,依次按11步骤包好枣泥馅
  • 13.转化糖浆75克,枧水1克,冷榨花生油25克,放入盆中调匀
  • 14.筛入中筋面粉100克,奶粉5克,揉成面团,静置醒发2个小时
  • 15.将醒发好的面团分成每个重15克的小剂子,团圆
  • 16.将面团压平放入枣泥馅
  • 17.用左右手虎口位置不断的推转面片
  • 18.逐渐推转,让面片均匀包裹在馅上
  • 19.封口团圆
  • 20.放入模具中,压出月饼
  • 21.烤箱预热200度上下火,在月饼上喷水,放入烤箱中层烤5分钟后待表皮花纹固定后
  • 22.5分钟后待表皮花纹固定后,在月饼表皮上刷少许薄蛋液
  • 23.放入烤箱烤15分钟直到表面金黄即可出炉
  • 24.晾凉后密封保存等待3天顺利回油
